National Carrot Cake Day

I'm never sure how many of these 'National days' to believe… but this is one I'm happy to go with. National carrot cake day- an excuse to eat cake, does it get any better?!

I've dug out a carrot cake recipe from the BBC Good Food website so you can have a shot at making your own and really get involved with National carrot cake day!



Here's what you need:

Ingredients:
175g light muscovado sugar
175ml sunflower oil
3 large eggs, lightly beaten
140g grated carrots (about 3 medium)
100g raisins
Grated zest of 1 large orange
175g self-raising flour
1 tsp bicarbonate of soda
1 tsp ground cinnamon
1/2 tsp grated nutmeg (freshly grated will give you the best flavour)

Frosting:
175g icing sugar
11/2-2tbsp orange juice.

Feel free to edit as you wish- I will personally be leaving out the raisins!

All that remains once your cake is baked is to share it with your friends (or not, it's up to you). Sit back with a slice and watch something relaxing on the T.V… I think there's a football match on, but taking my attention will be the film, Cars 2, on tonight, who says animated films are just for kids?!
